That would probably be a course in process theology/philosophy. Reason is simply that it is the school of theology I have spent the most time on during my studies and I find it very interesting.

What about raising alpacas. :plain:

This is a wonderful topic. I would like to teach a required freshman course titled "Choose Wisely". The focus would be to challenge each student's assumptions.

The topic of the very first session would be "Knowledge only gives you tools. Don't buy an axe if you need a screwdriver."

Forensics? Do you mean the work of a criminalist (Forensic Chemist), or a forensic psychologist, an expert on legal testimony about the mental condition of the defendant, for the court? There are forensic anthropologists; I believe they dig up bones and is more similar to the work of criminalists, like CSI, but not the running around after the bad guy part, as most stay in the laboratory
