Democrats almost won in 2000. Gore was gaining votes in the weeks after the election while suing for more and more time to do recounts in heavily democrat counties. Gore ultimately lost because the SCOTUS put a stop to the foolishness and certified Bush as the winner. Gore has never gotten over the loss just as Hillary has never gotten over her loss.
Trump lost to massive voter fraud. Biden's visible public support was quite small compared to Trump's but the number of unverifiable ballots for Biden compared to votes for Trump was massive.

You claim the democrats would have gained votes if the recount had been extended indefinitely and you are right. For decades democrats have gained votes in recounts that last weeks or even months after the election, especially with hundreds of new ballots being found in the trunks of cars or in washroom closets and the like.
Democratic votes did tend to increase in the days following elections but it is because of hanging chads, butterfly ballots, late counts of mail-in ballots, and irregularities related to lowered access to polling stations.
