A Holy Convocation is not a Sabbath.
And
God's command to; "do no customary work on it" is also not a command to call it a Sabbath.
You have read into some of those texts the word Sabbath when it is not there!:
Weekly Sabbath (Leviticus 23:3) - Yes, these are on days 8, 15, 22 & 29 each lunar month.
Unleavened Bread (Leviticus 23:7-8) - Yes, but only because it is day 15 (it does not say Sabbath in those verses)
Unleavened Bread (Leviticus 23:8) - No, there is no mention of it being a Sabbath.
Feast of Weeks (Leviticus 23:21) - No there is no mention of it being a Sabbath.
Trumpets (Leviticus 23:24) - Yes, day 1 month 7.
Atonement (Leviticus 23:27) - Yes, day 10 month 7.
Tabernacles (Leviticus 23:34-35) - Yes but only because it is day 15 (it does not say Sabbath in those verses)
Eighth Day (Leviticus 23:36) - Yes but only because it is day 22 (it does not say Sabbath in those verses)

38These offerings are in addition to those for the Lord’s Sabbaths and in addition to your gifts and whatever you have vowed and all the freewill offerings you give to the Lord.)
You will notice that only Trumpets and The Day of Atonement are stated by God as being called Sabbaths:
Leviticus 23:23-25
23 The LORD said to Moses, 24 “Say to the Israelites: ‘On the first day of the seventh month you are to have a day of Sabbath rest, a sacred assembly commemorated with trumpet blasts. 25 Do no regular work, but present a food offering to the LORD.’ ”
Leviticus 23:26-32
26 The LORD said to Moses, 27 The tenth day of this seventh month is the Day of Atonement. Hold a sacred assembly and deny yourselves, and present a food offering to the LORD. 28 Do not do any work on that day, because it is the Day of Atonement, when atonement is made for you before the LORD your God. 29 For whoever is not afflicted on that very day shall be cut off from his people. 30 And whoever does any work on that very day, that person I will destroy from among his people. 31 You shall not do any work. It is a statute forever throughout your generations in all your dwelling places. 32 It shall be to you a Sabbath of solemn rest, and you shall afflict yourselves. On the ninth day of the month beginning at evening, from evening to evening shall you keep your Sabbath.
The weekly Sabbath was calculated 7 days after New Moon Day:
Day 1 New Moon Day
Day 8 Sabbath
Day 15 Sabbath
Day 22 Sabbath
Day 29 Sabbath
