Who is 'they' in these verses and what are the gifts and calling that GOD made to 'they' which are irrevocable?
Israel.
But according to these bozos, Israel = Jesus, so they = Jesus.
What a mess they make of scripture!

I would not confuse the Person of Jesus with the spiritually blinded nation of Israel, but that nation was so named by God (through Jacob) because the incarnation of the promised Saviour, Seed, and Son of God, was to be produced by that nation (through David and Mary).

Israel, the nation, indeed carried the promised Seed and future Christ (in the loins of Judah) out of Egypt, to later be born as the promised Saviour in Bethlehem. Hosea 11:1

The Seed born in Bethlehem (Jesus Christ) escaped Herod's murderous decree in exile to Egypt, but was returned to grow into Manhood in Nazareth. Matthew 2:13-23

Thus the prophecy of Hosea 11:1 is interpreted and fulfilled in the Incarnate Son of God, Jesus the Christ, so named "Israel" by God.

It means they are not cut off forever.

Yes, he refers to Israel the race because they are the ones (like you) with the misconception that the race status alone guarantees a blessing from God. You have to speak to them about their understanding. That is not the same as agreeing with their understanding or validating it, which he does not.

Your group is about the only clique of people that I know of who don't realize that the NT breaks with that kind of race-based thinking. I hardly ever see it in churches anymore. Even the 'Israel prophecy news' people seem to know that you can't base things on the race alone, and thus come across more rationally because they believe the whole nation will convert and become Christians. You sound like it doesn't matter at all what their faith is in. Only that they are a certain race.
