Many people would deny that God is Sovereign simply because they dont see that exact phrase written in the scripture, though some translations may use that word. Nevertheless scripture does reveal that God is Sovereign without using that word specifically. What does the word means ? A dictionary says:
a monarch; a king, queen, or other supreme ruler.
a person who has supreme power or authority.
belonging to or characteristic of a sovereign or sovereign authority; royal.
having supreme rank, power, or authority.
supreme; preeminent; indisputable:
God no doubt is presented in Holy Scripture as The Supreme ruler, for His Kingdom of which He is King, rules over all
2 Chron 20:6
And said, O Lord God of our fathers, art not thou God in heaven? and rulest not thou over all the kingdoms of the heathen? and in thine hand is there not power and might, so that none is able to withstand thee?
Notice the word rulest, the God of heaven rulest over all the kingdoms of the heathen
The word rulest is the hebrew word māšal
Then notice the sacred writer writes that none is able to withstand thee. What does that mean ? Remember one of the definitions for sovereign is indisputable.
The word withstand gives the idea of one not able to hold or maintain there ground against
The word is used is Deut 7:24
And he shall deliver their kings into thine hand, and thou shalt destroy their name from under heaven: there shall no man be able to stand before thee, until thou have destroyed them
The word sovereign also denotes:
Him who has the authority and power to do what He pleases.! Now one sacred writer writes this about God Ps 115:3
But our God is in the heavens: he hath done whatsoever he hath pleased.
See that ? Thats Sovereignty, God does as He pleases.

35 And all the inhabitants of the earth are reputed as nothing: and he[God] doeth according to his will in the army of heaven, and among the inhabitants of the earth: and none can stay his hand, or say unto him, What doest thou?
