Jesus was resurrected on the day after the Sabbath to fulfill God's law to Israel, to whom he was sent.
Speak to the children of Israel and say to them: "When you come into the land which I give to you and reap its harvest, then you shall bring a sheaf of the firstfruits of your harvest to the priest. He shall wave the sheaf before the Lord, to be accepted on your behalf, on the day after the Sabbath the priest shall wave it." (Leviticus 23:10-11)
Jesus fulfilled the law of the wave sheaf. He is the first of the firstfruits.
Those who honor the resurrection honor the law that required it.
But you are going back and forth between Judaism and faith in Christ. The picture or typology is FULFILLED in Christ. It's good to keep the picture accurate in one's memory, but we don't practice it. They were meant to kickstart the church's mission because the group from which Jesus drew his first missionaries were Jews, his countrymen.

Did early Christians (1st Century) observe "Resurrection Day"?
Jesus said he came to fulfill the Law and the Prophets. He has barely scratched the surface and he has much more to do, ie. you ain't seen nothing yet.
